​At the 1st floor restaurant "Aquarius," we offer a weekday-only à la carte lunch menu, the "One Soup, Three Dishes Plate," featuring fresh seasonal fish. Enjoy the seasonal flavors, with meticulous attention paid to everything from ingredient selection to the preparation of each dish.
 

The delicious flavors of the season come from the bountiful sea.

The waters off Shimane Prefecture are blessed with a complex seabed topography and abundant ocean currents. Fresh, seasonal fish are caught in these bountiful waters. To ensure that the fish remain as fresh as possible from Shimane to Ishigaki Island, we carefully select only the best catches, using optimal fishing methods such as net fishing and offshore fishing.

To maximize the natural flavor of seasonal fresh fish, the hotel chefs carefully select the best fish and devise the optimal menu.
