| Ichibo | It's a part of the thigh meat, sometimes called "beef's premium tuna," and is a rare cut, with only a few kilograms obtainable from a single cow. Because it is tender and easily marbled, this meat allows you to enjoy both the chewiness of lean meat and the rich flavor of fat at the same time. The bone in that area is H-shaped, hence the name "ichibo" (rump steak). |
